Ingredients for the Waffle
- 2 cups flour
- 1 tsp pumpkin spice (1/2 cinnamon, 1/2 nutmeg)
- 1 eye dropper liquid stevia or 4 packets of powdered stevia
- 1 tsp baking powder
- 1 tbsp coconut oil (olive oil works as well)
- 1 cup almond milk
- 1/2 cup water
- 1/2 cup Pumpkin Spice MuscleEgg
- 3/4 cup canned pumpkin
Ingredients for the Topping
- 1/2 cup greek yogurt
- 1/2 cup canned pumpkin
- 1/2 tsp pumpkin spice (1/2 cinnamon, 1/2 nutmeg)
- 1 eye droplet of vanilla stevia or 4 packets of stevia
Instructions
- Pre-heat your desired waffle maker according to the manufacturers instructions. Combine all dry ingredients in a mixing bowl. Add wet ingredients and stir into a pancake batter. If the mixture is too thick, add 1 tbsp of water at a time until desired consistency is reached (it should be slightly runny). Lightly spray inside of waffle maker with non-stick. Pour a layer of batter into the waffle press ensuring all cracks are filled. Close top and cook per your waffle makers manufacturers instructions. (usually 4-5 minutes each waffle). Carefully remove + repeat.
- Combine all ingredients in a small bowl. Add toppings as desired to cooked waffle. Dust with cinnamon and enjoy.
