Ingredients
LOAF
- 1 1/2 cups of whole wheat flour
- 2 tsp baking powder
- 1/2 tsp kosher salt
- 1 cup plain greek yogurt
- 1 eye droplet of Vanilla Cream Stevia or 1/2 cup of Sweet Leaf/Splenda (sugar substitute)
- 1 extra-large egg
- 1/3 cup Original or Organic MuscleEgg
- 2 tsp grated lemon zest (1-2 lemons)
- 1/2 tsp pure vanilla extract
- 1 tbsp of coconut oil
- 1/3 cup lemon juice
- 1 tsp of poppy seeds
GLAZE TOPPING
- 2 scoops vanilla casein protein
- 1/2 cup of water or almond milk (to desired thickness)
- Sprinkle icing with poppy seeds
Instructions
- Sift together the dry ingredients – flour, baking powder and salt – into a medium sized bowl.
- In another bowl combine the yogurt, sweet leaf/stevia, egg, MuscleEgg, lemon zest, and vanilla.
- Whisk these ingredients together and then combine dry into wet.
- Preheat oven to 350 and bake for 40-45 minutes or until a fork comes out clean
- Let cool and spread glaze
