You’ve heard of overnight oats, but what about overnight french toast? The concept is the same – you prep it the night before and in the morning you have a delicious, protein packed, grab-and-go breakfast that will save you time in the morning and help you feel full till lunch time. We use cranberries and blackberries in this recipe and they go together so perfectly with the french toast!
While you can make this with plain original or organic MuscleEgg, it would also taste great with some our other flavored egg whites as well. For a great breakfast that will feed you all week long, is paleo friendly, gluten free, dairy free and low carb – this one is a must try!

Paleo Cran-Blackberry Overnight French Toast
- 9 paleo buns cubed
- 4 large eggs
- 1 cup milk
- 1/2 cup MuscleEgg egg whites*
- 1 tsp vanilla extract
- 1 tsp Vietnamese cinnamon
- 2 scoops collagen**
- 1 cup cranberries
- 3/4 cup blackberries
Line a backing pan with parchment or foil
Whisk together eggs, egg whites, vanilla, cinnamon and collagen in a bowl
Add in bread and gently toss
Add in berries and mix
Pour into pan
Allow to sit overnight
When ready to bake, remove from the fridge and bake at 350 degrees F for 30-40 minutes or until fully cooked
