If you like your buffalo chicken on the spicy side, just add a little more buffalo sauce! This also makes great leftovers as it can be used in sandwiches, wraps, spread on top of rice – you name it! This healthy baked casserole is likely to become a staple in your meal prep!

Baked Buffalo Chicken Casserole
Ingredients
- 1/2 cup MuscleEgg Plain Egg Whites
- 1 lb cooked, shredded chicken breast
- 3 3/4 cups riced cauliflower *about 425g
- 1 small onion
- 1/2 cup carrot
- 1/2 cup celery
- 1/2 clove garlic
- 1 tbsp ghee
- 1/4 tsp black pepper
- 1/2 cup buffalo sauce
- Ranch Dressing *as desired
- Chives *as desired
Instructions

Preheat oven to 400 degrees

Line a baking pan with parchment paper

Add ghee, onion, carrots, celery and garlic to a skillet and saute until onion is translucent and softened

Add cauliflower rice, shredded chicken, sauteed veggies, egg whites and buffalo sauce to a bowl

Mix well

Pour into lined baking pan

Bake covered for 25 minutes

Remove cover and bake an additional 20-25 minutes or until set

Top with ranch and chives, if desired
