Who doesn't love a warm, soft chocolate oatmeal cookie? These ones are full of chocolatey goodness AND protein. They're not your average oatmeal cookie. Make a batch and you've got the perfect snack to keep you full and satisfied throughout the day. They're also a great post workout treat. Or, grab one before you hit the sack at night. OK, who are we kidding? You'll want to eat them every time you feel a sweet craving coming on.

Ingredients

  • 1/4 cup Chocolate MuscleEgg
  • 3/4 cups oats
  • 1/4 cup Kodiak 'Dark Chocolate' Powercakes mix
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup softened butter
  • 1/2 cup brown sugar
  • 2 tablespoons baking stevia
  • 1 Large whole egg
  • 1 teaspoon vanilla extract
  • 1/4 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper or a silpat.
  2. In the bowl of a stand mixer cream butter, brown sugar, and stevia until light and fluffy. Add vanilla. Beat in egg and then egg whites.  In a separate bowl, combine oats, kodiak, salt, and baking powder.
  3. With stand mixer on low speed, slowly add dry ingredients. Mix until combined. Stir in chocolate chips.
  4. Bake for 12-15 minutes until center of each cookie is set, but still soft.
