Cheddar and Herb Egg Bake With Ham

With a more dense, muffin like feel this cheddar and herb egg bake with ham incorporates a full breakfast into every square you serve! Great for brunch or to make and take on the go.

Ingredients

  • 2 cups Kodiak "Honey & Buttermilk*" Mix
  • 2 tablespoons Sweet Leaf Stevia
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried rosemary
  • 1/4 cup chives chopped
  • 2 large whole eggs
  • 1/3 cup Organic MuscleEgg plain egg whites
  • 1 cup milk of choice
  • 1 tablespoon olive oil or coconut oil
  • 1/2 large zucchini finely shredded
  • 4 ounces diced ham
  • 3/4 cup shredded fat free cheddar cheese

Instructions

  1. Preheat oven to 350 degrees and coat a 9x9 baking dish with non stick spray. In a large bowl, combine Kodiak, stevia, baking powder, baking soda, and all spices/herbs. Add eggs, egg whites, milk, and olive oil. Mix until well combined. Stir in shredded zucchini, ham and cheese.
  2. Pour into prepared dish and bake to 25-30 minutes until edges and top are slightly golden brown and a toothpick comes out clean when poked through the center.
