Steak & Egg White Breakfast Burrito

The combo of steak and egg whites stuffed inside a tortilla with homemade salsa verde makes these breakfast burritos a flavorful meal that you will want for breakfast, lunch AND dinner. It's just that good. Make enough for the week and freeze the ones you aren't eating right away. They warm up great and taste amazing!

Part of what makes these breakfast burritos so good is the homemade salsa verde. It's super easy to make and you can use it for other breakfast meals as well! Try scrambling up some plain MuscleEgg egg whites with the left over sauce for a super quick and yummy scramble.

Ingredients

Salsa Verde

  • 1 tsp olive oil
  • 1 1/2 pounds tomatillos
  • 1 Jalapeno
  • 1/4 medium onion
  • 2 cloves garlic
  • 1/2 cup cilantro
  • 1 tbsp lime juice
  • Sea Salt

Burritos

  • 1 1/2 cups MuscleEgg egg whites plain
  • 5 oz flank steak
  • 5 medium whole wheat wraps
  • seasoning

Instructions

Salsa

  1. Add olive oil, tomatillos, onion and jalapeno to a large skillet
  2. Saute on high heat until carmelized on both sides
  3. Transfer ingredients to a blender and add in garlic, cilantro and lime juice
  4. Blend until combined

Burritos

  1. Scramble egg whites until just cooked through
  2. Remove from the pan and add in flank steak and seasoning. Season simply with salt and pepper or use fajita seasoning.

  3. Cook steak until desired doneness
  4. Make wraps by layering egg whites, steak and salsa in the middle and folding up
  5. Wrap in parchment paper and seal
  6. Repreat until all wraps are made
