Cookie Dough Truffles

Bite size no bake COOKIE DOUGH TRUFFLES! Another yummy treat that requires zero oven time. Who could dislike that? Sometimes you get a craving for cookies, but don't want to make and bake them. And, sometimes you don't want all the garbage that's in most cookies either. 

These cookie dough truffles are the perfect answer to your cravings. Chocolate chips provide those nice crunchy bites that'll satisfy any sweet tooth out there. They're like the chocolate chip cookie dough you'd eat as a kid after Mom finished a batch and gave you the bowl to clean out. But, these are much better for you.

It's a good thing these are easy to make because you won't be able to keep other people away from them! Coworkers, kids, boyfriends, girlfriends, friends in general....everyone is going to want some of these, so be sure to have enough on hand to share!

Ingredients

  • 1/4 cup Chocolate MuscleEgg egg whites
  • 1 cup almond or cashew butter
  • 3/4 cup coconut flour
  • 1 pinch salt
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons sugar free syrup
  • 1 cup mini chocolate chips

Instructions

  1. In a food processor, add almond/coconut/cashew butter, coconut flour, salt, vanilla extract, MuscleEgg, and syrup. Blend on high until dough comes together.
  2. Carefully remove blade and stir in chocolate chips.
  3. Divide and portion truffles with a small ice cream scoop or melon baller. Place on a tray or baking sheet and place in the fridge for 10-15 minutes to harden.
