Spaghetti Squash with Meatballs

This spaghetti squash with meatballs recipe takes a family favorite meal and turns it into a healthy, filling meal that you'll want to make again and again. It's got all the classic flavors you want in a good pasta dish, but without all the carbs!

Ingredients

Spaghetti Squash Bake

Meatballs

  • 1 lb lean ground beef
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder
  • 1 1/2 tbsp parsley
  • 1/2 tsp black pepper
  • 3/4 tsp sea salt

Instructions

  1. Preheat oven to 400 degrees.

  2. Mix together spaghetti squash, eggs, 3/4 cup pasta sauce and 1/2 cup cheese. Place into a cast iron skillet and baked 20 minutes.
  3. While squash mixture is baking, make the meatballs. Mix together together all ingredients for Meatballs until just combined and roll into 8 balls. Set aside.

  4. Remove squash mixture from the oven and top with remaining sauce, meatballs and cheese. Return to the oven and bake for an additional 15-18 minutes or until meatballs are cooked. 

  5. Allow to cool slightly before serving.
