Paleo Cran-Blackberry Overnight French Toast

A tasty, healthy breakfast, this overnight french toast is made with cranberries, blackberries and is paleo friendly! Of course, it's gluten and dairy free so it works with many different diets. Low carb, high protein and delicious! It's a great meal to prep for the week or share with the family in the morning! 

Feel free to sub out the berries for whichever berries are your favorite or happen to be in season. Strawberries and raspberries work great with this overnight french toast as well. Anything overnight is easy, so it'll save you time in the morning as well!

Ingredients

  • 1/2 cup Organic MuscleEgg egg whites
  • 4 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1 tsp Vietnamese cinnamon
  • 2 scoops collagen (can sub with protein powder or leave out)
  • 9 Paleo Buns (Foxhill Kitchens is what we used) (paleo friendly english muffins)
  • 1 cup cranberries
  • 3/4 cup blackberries

Instructions

  1. Line a backing pan with parchment or foil

  2. Whisk together eggs, egg whites, vanilla, cinnamon and collagen in a bowl

  3. Add in bread and gently toss

  4. Add in berries and mix

  5. Pour into pan

  6. Allow to sit overnight

  7. When ready to bake, remove from the fridge and bake at 350 degrees F for 30-40 minutes or until fully cooked
