Snickerdoodle Cookies

Snickerdoodle cookies are meant to put a smile on your face. So, of course there's butter in this recipe. We try to keep it on the healthy side though, so don't let the butter scare you away. These cookies are still relatively good for you compared to your average cookie. After all, we make our snickerdoodle cookies without cream of tartar. That adds to the healthy factor.

And being a favorite, you'll make a lot of mouths happy with these easy snickerdoodle cookies. That's right. Easy. That means you'll be making yourself happy too. Not just because they taste great, but because you don't have to spend hours in the kitchen making them. Unless, of course you are making them by the hundreds! In that case, maybe you should think about opening up shop somewhere and selling them to all the snickerdoodle sugar cookie fiends out there.

Back to the chewy snickerdoodle cookies on display here though - these ones are nice and chewy. You can enjoy them without fear of breaking a tooth or having them crumble when you pick them up. Ingredients

  • 1 cup butter room temperature
  • 1 1/4 cup coconut sugar
  • 1/4 cup Vanilla MuscleEgg egg whites
  • 1 1/2 teaspoon vanilla extract
  • 3 cups Kodiak Power Cakes
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup sugar
  • 1 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350 degress F and line a cookie sheet with parchment paper or non-stick spray
  2. In a large bowl whisk together Kodiak mix, baking powder, and salt, then set aside
  3. Using a stand or hand mixer, cream butter and sugar together until light and fluffy
  4. Beat in MuscleEgg Vanilla egg whites and vanilla extract until well combined
  5. Slowly add in the flour mixture - dough should come together into a ball. If too sticky, add an extra tablespoon of Kodiak. If dough is too dry, add a tablespoon of water or milk.
  6. In a separate small bowl combine sugar and cinnamon
  7. Form cookies into a ball and roll each in the sugar/cinnamon mixture, then place on baking sheet
  8. Bake 10-12 minutes just until centers are set
