Open Face S'mores Whoopie Pies

Serves 12 Open face s'mores whoopie pies. Wow! That's kind of a mouthful, but it's the yummiest mouthful you'll out in your face all summer! When it's Summertime, campfires abound. And where there's a campfire, you will find s'mores. This recipe brings the best part of a camp out to your kitchen so that you can enjoy s'more any time you want!

These s'mores are made open face style to get that marshmallowy goodness in full effect with every bite. Add in the whoopie pies and this is a snack you'll want again and again. And again. And then again. And again. And maybe just one more. Better get used to making these delicious morsels!

Ingredients

  • 1/4 cup Chocolate MuscleEgg egg whites
  • 1 1/2 cup dark chocolate Kodiak Power Cakes
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup coconut sugar
  • 3 tablespoons coconut oil
  • 2 tablespoons milk of choice
  • 6 in sheets graham crackers split 1/2
  • 1 cup mini marshmallows

Instructions

  1. Preheat oven to 350 degrees
  2. Coat a whoopie pie pan with non-stick spray
  3. Add all ingredients (EXCEPT graham crackers and marshmallowinto the bowl of a stand mixer and beat on high until smooth
  4. Pour into prepared pan and bake for 7-10 minutes
  5. Remove from oven and add one graham cracker square to the tops of each cake
  6. Place mini marshmallows on top of graham crackers
  7. Place under broiler for 1-2 minutes until golden brown
  8. Enjoy
