Healthy Cake Batter Truffles Recipe

Ingredients

  • 1 cup protein pancake mix
  • ¼ cup dry sweetener of choice
  • 1 tablespoon coconut flour
  • 4-5 tablespoons MuscleEgg cake batter egg whites
  • 1 tablespoon sprinkles + more for topping if desired
  • cup white chocolate chips
  • 1 tablespoon coconut oil
  • Instructions

Instructions

  1. Sift together pancake mix, sweetener and coconut flour
  2. Add egg whites in 1 tablespoon at a time until a dough forms (it will be only slightly sticky. Add more coconut flour if too wet or more egg whites it too dry)
  3. Place dough in the refrigerator for 30 minutes to chill
  4. Remove dough and roll into desired size truffles
  5. Place in the freezer for 10 minutes
  6. While truffles are in the freezer, combine your white chocolate and coconut oil and melt
  7. Remove truffles from the freezer and dip into the melted white chocolate
  8. Top with more sprinkles, if desired
  9. Place in the refrigerator to set for 30 minutes
  10. Enjoy
