Mini Valentine Pancakes Bites

Valentines day is a love it or hate it holiday. There is no middleground. But regardless of how you feel about the holiday, you'll love these mini valentine pancakes bites. You don't need a significant other to enjoy these. In fact, once you taste them, you'll want to pretend like your swolemate doesn't exist so that you can have them all to yourself! If you do find it in your heart to share, make sure you make plenty! and if you have kids, they'll love you that much more for making these heavenly little pancakes bites for them. Bonus points if you shape them like hearts. Of course, these pancakes bites are great just like this, but being pancakes (or, muffins), you may want to add your own toppings or dips to suit your own taste preferences. Whipped cream and fruit is always a favorite or your favorite nut butter can really jazz these bites up!

Ingredients

  • 1 1/2 cup Kodiak Super Food Mix
  • 2 tablespoons coconut flour
  • 3/4 teaspoons baking powder
  • 1 scoop vanilla protein powder
  • 1/4 cup stevia
  • 1 large whole egg
  • 3 tablespoons Cake Batter MuscleEgg egg whites
  • 1 teaspoon vanilla extract
  • 1 3/4 cup milk of choice
  • 2 tablespoons heaped heart sprinkles

Instructions

  1. Preheat oven to 375 degress.
  2. Coat a mini muffin pan with non-stick spray.
  3. Combine all ingredients (except sprinklein a large bowl.
  4. Mix until smooth.
  5. Pour into prepared pan and add sprinkles if desired.
  6. Bake for 12-15 minutes.
  7. Dip in syrup if desired.
  8. Enjoy!
