Crust Ingredients
- 2 cups almond meal
- 1/3 cup Pumpkin Spice MuscleEgg
- 2 tsp cinnamon
- 3 tbsp coconut oil
Filling Ingredients
- 1 can pumpkin
- 1/3 cup Pumpkin Spice MuscleEgg
- 2 tbsp apple sauce
- 1 tsp vanilla or almond extract
- 1 eye droplet of vanilla stevia or 1/4 cup stevia
- 1 8oz packet of fat free cream cheese
- 1 tsp pumpkin pie spice (or half cinnamon/half nutmeg)
Crust Instructions
- Preheat oven to 375.
- Mix ingredients together and stir until smooth.
- In a 9″ pie pan, grease lightly with coconut oil.
- Gently press crust mixture into pan and slowly work up edges.
- Bake for 10-12 minutes.
Filling Instructions
- Combine all ingredients and mix or wisp together.
- Bake for an additional 40 minutes or until cracks begin to form at pie edges.
- Remove from oven and let cool.
- Place in refrigerator overnight or for at least 2 hours before serving.
- Serve chilled.
