Just For Fun Vanilla Cupcakes

Who doesn't love a delicious,moist, simple vanilla cupcake? This version has taken a common treat and turned it into a not-so-common healthy snack-sized cake. When you're craving something sweet, but don't want to ruin your diet, this recipe will make your mouth happy. Of course, it would be a great one for birthdays, but cupcakes can be made in larger batches and snacked on throughout the week without any additional work. Not a bad way to reward yourself for an awesome workout!

Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 4 tbsp almond flour
  • 2 tbsp peanut powder
  • 1 tsp baking powder
  • 2 tbsp ground flax
  • ¼ cup MuscleEgg vanilla egg whites
  • 1 tsp vanilla extract
  • 1-2 tsp stevia (liquior sweetener of choice
  • 2 tbsp frosting

Instructions

  1. Pre heat oven to 350 degrees
  2. Line 2 cupcake molds with cupcake liners
  3. Combine dry cupcake ingredients
  4. Mix wet ingredients into dry ingredients
  5. Divide batter evenly among 2 molds/cupcake liners
  6. Bake for about 15 minutes (cupcakes will seem a bit soft but they will continue to set as they cool)
  7. Allow to cool
  8. Once cooled, frost as desired
