Ever feel like you need a little pick me up in the middle of your day? How about a crunchy, chewy chocolatey treat. These espresso chip cookies are your answer. They’re easy to make and you’ll have a protein packed pick-me-up that you can snack on any time of day.
Espresso Chip Cookies
Ingredients
- 1/4 cup Chocolate MuscleEgg Egg Whites
- 1/2 stick Butter softened
- 2 cups Kodiak Cakes Power Cakes
- 1/4 cup freshly brewed espresso
- 1/2 cup mini chocolate chips
Instructions

Preheat oven to 350 degrees and line a baking sheet with parchment paper.

In the bowl of a stand mixer fitted with the paddle attachment, cream butter and egg whites until light and fluffy. Add espresso and whip until smooth.

Slowly add in the Kodiak baking mix 1/3 at a time. Mix just until combined. Stir in chocolate chips.

Portion and scoop cookie dough onto prepare cookie sheet. Bake for 12-15 minutes until edges are LIGHTLY browned and centers are just set (this is for a soft baked cookie).
