Coconut Key Lime Pie Protein Macaroons
You won't find a lot of "cookies" that don't use flour. But, in these tasty little Coconut Key Lime Pie Macaroons you won't miss it! And the lack of flour makes them a great choice for anyone with gluten allergies...or anyone who likes yummy, bite-sized, refreshingly good snacks. The key lime pie and coconut flavors meld perfectly in a delicious little cookie that you can take as a healthy, protein snack wherever you go!
Not to be confused with macarons (the French sandwiched cookies), these macarOOns (that's with two "o"s) can be whipped up pretty quickly and make for a great meal prep snack. You only need five ingredients and optional white chocolate. And, since you don't have to bake them, they'll be ready quick! The star ingredient here is the Key Lime Pie flavored MuscleEgg, so go ahead and grab some and be sure to give these sweet little cookies a try!
Ingredients
- ¼ cup MuscleEgg key lime pie egg whites
- ¾ cup shredded coconut
- 1 scoop almond infused vanilla whey protein powder
- 1 tablespoon key lime juice
- stevia to taste
- white chocolate if desired
Instructions

Add key lime egg whites, shredded coconut, whey protein powder, key lime juice and sweetener to a food processor

Pulse until a soft "dough" forms

Using a measuring spoon in 1-2 inch size (I used 1½ tbs), scoop and press into measuring spoon

Gently slide out of spoon

Repeat until all dough is gone

Drizzle with white chocolate, if desired
