Blueberry Banana Protein bread

This is a delicious and healthy spin on traditional banana bread.

Ingredients

  • 1 banana
  • 1/3 cup greek yogurt
  • 1 tbsp olive oil or coconut oil
  • 30 grams vanilla jay robb protein powder
  • 3 tbsp Vanilla MuscleEgg
  • 1 tbsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp Xanthum Gum
  • 1/4 cup coconut flour
  • 2 tsp unsweetened Vanilla Almond Milk
  • 1/4 cup crushed walnuts
  • 1/2 cup blueberries

Instructions

  1. Preheat oven to 350F
  2. In a large mixing bowl, combine banana, greek yogurt, coconut oil and mix together
  3. Add 1 scoop vanilla whey protein powder and continue to mix ingredients
  4. Add 3 tablespoons Vanilla MuscleEgg
  5. Slowly fold in the rest of the dry ingredients
  6. Add 2 tablespoons Unsweetened Vanilla Almond Milk to thin mixture just a bit
  7. Last carefully stir in whole fresh blueberries
  8. Spray or grease a 9″ loaf pan and line with parchment paper
  9. Pour your batter into the pan and smooth top with spatula
  10. Bake at 350F for 40 min (give or take 5 minutes depending on the strength of your oven)
  11. Remove and place on a cooling rack.
