Our Key Lime Pie MuscleEgg has been a big hit! And, because it's seasonal, people have been scooping it up as fast as we can make it. Being our newest flavor, the recipes are still coming in, but this Key Lime Pie Parfait recipe from Corina Nielsen is a definite "must try" for anyone with a sweet craving.

The key lime pie flavor of the MuscleEgg is a perfect balance of sweet and not too tart that, when mixed with the other expected parfait ingredients, brings the whole parfait recipe together perfectly. It's soft, smooth and the graham crackers give it a yummy, crunchy top. It's so good that it's likely to become a weekly addition to you your diet throughout the Summer.

Being a parfait recipe, you can have it as a quick and tasty breakfast or as a sweet snack any time! It would make a perfect pre-bed time snack. Since it uses pretty common ingredients, this parfait recipe can be made almost any time! No need to run to the store for any missing ingredients with this one.

Ingredients

  • 1/2 cup Key Lime Pie MuscleEgg egg whites
  • 2 oz softened cream cheese
  • 1/2 cup 0% Greek yogurt
  • 1 scoop vanilla protein powder
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon key lime zest
  • 1 tablespoon heaped key lime juice
  • 2 sheets graham crackers
  • 1 pinch cinnamon
  • 2 teaspoons flax oil

Instructions

  1. Add cream cheese, Greek yogurt, vanilla, MuscleEgg, juice, and zest of key limes to a stand mixer and mix on high until smooth and fluffy.
  2. Place graham crackers in a small zip lock bag and crush with hands or rolling pin. Add crumbs to a small bowl.
  3. Add flax oil and cinnamon, then mix until well combined.
  4. Layer yogurt mixture with graham cracker crumbs, garnish with whipped cream and extra lime zest.
  5. Enjoy!
