Peanut Butter Cheesecakes w/ Apple
Bringing together a few favorites, this Peanut Butter Cheesecake with Apple is sure to please any palate. These three favorites of every kid you know are brought together deliciously and are packed with protein. Makes a handful of mini cheesecakes that taste great!
- 1/4 cup Vanilla MuscleEgg egg whites
- 3 tablespoons cream cheese softened
- 1/2 scoop vanilla protein powder
- 1/2 teaspoon cinnamon
- pinch nutmeg
- 1 cup shredded apple
- 1/2 cup walnuts
- 2 dates soaked
- 1 tablespoon coconut sugar
Preheat oven to 325 degrees.
In a small bowl, combine softened cream cheese, protein powder, MuscleEgg, cinnamon, and nutmeg. Mix until smooth. Stir in shredded apples. Set aside.
For crust, combine walnuts, dates, and coconut sugar. Blend until a dough forms.
Press crust into the bottom of a silicon cupcake mold. Pour cheesecake batter over crust.
Bake for 18-20 minutes until middle of cheesecakes are just set, do not over bake.
Top with apple and caramel if desired.
