Just because the holidays are here doesn't meant that you have to stuff yourself with unhealthy snacks or spend hours baking in the kitchen. Enter no bake cookies. But not just your usual oatmeal and cocoa style. We do it up right with these No Bake Peppermint White Chocolate Cookies from Sarah Kesseli. Kids love cookies that kick the oven to the curb because they can help you make them. Depending on their experience in the kitchen, your kids can even make these themselves! Although, you'll want to make your own to keep a stash hidden from the kids and visitors that you can take as a quick post-workout treat, before bed snack or to eat any time you get that sweet tooth and don't won't to kill your diet! The flavors here are perfect for holiday treats. Try this recipe once and you'll probably make it a couple more times before the year is over! They are THAT good!

Ingredients

*Cookies*

  • 1 cup oat flour 120g
  • 1 cup rolled oats 80g
  • 2 scoops vanilla protein powder 80g
  • ½ cup white chocolate peanut butter 128g
  • ¼ cup honey 84g
  • ¼ cup MuscleEgg Vanilla Egg Whites * + 2 tbs if needed
  • 1 teaspoon peppermint extract
  • pinch salt

*Topping*

  • 5-6 tbs white chocolate

Instructions

  1. Mix together dry ingredients: oats, oat flour and protein powder
  2. Mix in honey, white chocolate peanut butter, peppermint extract and ¼ cup MuscleEgg egg whites
  3. Mix well (this will require some mixing)
  4. Depending on your protein powder you may need to add 1-2 tbs vanilla egg whites
  5. Once combined place in refrigerator for 15 minutes
  6. Remove and shape into desired size cookies
  7. Melt white chocolate and drizzle over cookies
  8. Decorate, as desired
