Who doesn't love a brownie? Try our mint brownies and you'll fall in love all over again. It's a perfect flavor combination for this time of year. And you can make your brownies go even further by dropping a scoop of vanilla ice cream on top for that perfect combo of warm brownie and cold ice cream. Of course, these mint brownies will stand on their own as a minty chocolate dessert that you can eat again and again and never get sick of. This easy recipe only uses a few ingredients and bakes up pretty quick so you can enjoy more of your time freely.

Ingredients

  • 1/2 cup Mint Brownie MuscleEgg
  • 1 box Kodiak Cakes brownie mix
  • 2 tablespoons coconut or canola oil
  • 1/2 cup unsweetened apple sauce
  • 1/4 teaspoon mint extract
  • 3-4 tablespoons heaped Andes mint baking pieces

Instructions

  1. Preheat oven to 350 degrees and coat a whoopie pie pan with non-stick spray (you may also use a mini/regular muffin pan)
  2. In a large bowl, combine all ingredients except for Andes mint pieces. Mix until well combined and batter is smooth. Divide and pour batter into pan. Sprinkle Andes mint pieces on top.
  3. Bake for 8-10 minutes for whoopie pie pan (15-20 minutes for regular muffin pan)
  4. Serve warm with ice cream, whipped cream and additional andes mint pieces.
  5. Enjoy!
