Honey Muffins with Poppy Seeds
Muffin lovers rejoice with our Honey Muffins with Poppy Seeds recipe! This is a healthy take on poppy seed muffins that people have come to love. Sweetened with honey and featuring vanilla MuscleEgg, you're going to love these! They're easy to make and batch will provide you with a week of breakfasts or snacks!
We top our honey muffins with blueberry or raspberry preserves, but they taste great plain too! Of course, you can top yours with whatever you like. And, if you decide to share with the family, they can with whatever they like too!
- 1/2 cup Vanilla MuscleEgg egg whites
- 1 1/2 cups gluten free flour
- 2 tbsp coconut flour
- 1 1/4 cups milk of choice
- 1/3 cup oil of choice
- 1/4 cup honey
- 1 tbsp poppy seeds
- 1 cup blueberry or raspberry preserves or jam ** TOPPING **
Preheat oven to 375 degrees and line a cupcake pan with paper liners or coat with non stick spray.
Combine muffin ingredients into a large bowl and mix well until smooth. Divide and pour batter into prepared cupcake pan.
Bake for 15-17 minutes until slightly golden brown and a toothpick comes out slightly moist when poked through the center. Let cool slightly.
Add 1-2 tbsp of preserves on top and add fresh blueberries or raspberries if desired.
