Honey Muffins with Poppy Seeds

Ingredients

  • 1/2 cup Vanilla MuscleEgg egg whites
  • 1 1/2 cups gluten free flour
  • 2 tbsp coconut flour
  • 1 1/4 cups milk of choice
  • 1/3 cup oil of choice
  • 1/4 cup honey
  • 1 tbsp poppy seeds
  • 1 cup blueberry or raspberry preserves or jam ** TOPPING **

Instructions

  1. Preheat oven to 375 degrees and line a cupcake pan with paper liners or coat with non stick spray.
  2. Combine muffin ingredients into a large bowl and mix well until smooth. Divide and pour batter into prepared cupcake pan.

  3. Bake for 15-17 minutes until slightly golden brown and a toothpick comes out slightly moist when poked through the center. Let cool slightly.
  4. Add 1-2 tbsp of preserves on top and add fresh blueberries or raspberries if desired.
