Sausage Lover’s Hashbrown Casserole

Sausage Lover’s Hashbrown Casserole – This recipe is what you make for breakfast, lunch or dinner when you need something quick, satisfying and healthy! If you’re a fan of sausage and potatoes you will definitely love this! Made with plain Original MuscleEgg egg whites. Whole30. Paleo. Gluten-free.

Ingredients

  • 1 1/3 cups MuscleEgg Original egg whites
  • 6 large eggs
  • 4 - 6 sausages
  • 4 cups shredded potatoes thawed
  • handful fresh spinach
  • Salt & Pepper to taste

Instructions

  1. Pre-heat oven to 350 degrees F
  2. Coat a 9x13 inch baking dish with non-stick spray or oil
  3. Sauté sausage in a non-stick pan, if desired. If using pre-cooked sausage this isn't necessary. However, I liked the flavor from the cooked sausage.
  4. Whisk together eggs and egg whites
  5. Add in sausage, shredded potatoes and spinach
  6. Mix well
  7. Pour into baking pan
  8. Bake for about 45 - 50 minutes or until the middle is set
  9. Serve hot, warm or cold.
