- 8 cups of liquid egg whites (or an equivalent amount of liquid egg whites)
- 1/4 teaspoon of lemon pepper seasoning blend
- 1/2 cup of chopped green bell peppers
- 1 cup of chopped raw onions
- 2 ounces of mozzarella cheese (part skim milk)
- 1 cup of fresh spinach
- Mix everything (except for the cheese).
- Pour into an oiled up muffin pan.
- Top with cheese.
- Bake at 350 degrees for 15 minutes.
- This recipe takes only 20 minutes to prepare and makes 12 small muffins.
