Egg White, Spinach and Cheese Muffin

Ingredients

  • 8 cups of liquid egg whites (or an equivalent amount of liquid egg whites)
  • 1/4 teaspoon of lemon pepper seasoning blend
  • 1/2 cup of chopped green bell peppers
  • 1 cup of chopped raw onions
  • 2 ounces of mozzarella cheese (part skim milk)
  • 1 cup of fresh spinach

Instructions

  1. Mix everything (except for the cheese).
  2. Pour into an oiled up muffin pan.
  3. Top with cheese.
  4. Bake at 350 degrees for 15 minutes.

Notes

  • This recipe takes only 20 minutes to prepare and makes 12 small muffins.
