Ingredients

Cupcakes

  • 1/2 cup Cake Batter MuscleEgg egg whites
  • 1 1/2 cups gluten free flour
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1/2 cup coconut sugar
  • 1/4 cup melted butter or coconut oil
  • 1 1/2 cups egg nog

Frosting

  • 1/2 cup egg nog
  • 1 cup softened butter
  • 1 tsp vanilla extract
  • 1/4 tsp nutmeg
  • 1 cup powdered stevia
  • 5-10 drops blue food coloring

Instructions

  1. Preheat oven to 350 degrees and line a mini cupcake pan with paper liners or non stick spray.
  2. Combine all cupcake ingredients into a large bowl and mix on high until smooth. Divide and pour into cupcake pan.
  3. Bake for 10-12 minutes until a toothpick comes out clean when poked through the center. Remove from oven and let cool completely.
  4. Prepare frosting by adding butter to a large bowl or stand mixer. Beat on high for 1 minute until smooth. With mixer on, add egg nog, vanilla, nutmeg, and food coloring. Beat on high for 1 minute. Slowly add in powdered stevia. Add food coloring. Frost cooled cupcakes and add winter sprinkles if desired.
