Easy Peanut Butter Cookies - Chocolate Dipped and Salted

Sweet and savory come together in these easy peanut butter cookies that are dipped in chocolate and sprinkled in salt. How much more perfect can dessert get? None. That's how much. You've got chocolate. You've got peanut butter. A small sprinkle of course salt (we prefer pink sea salt) perfectly brings out the flavors that will meld in your mouth to form a chewy (or crunchy, depending on how you like it and how long you bake your cookies for) and tasty treat for whenever you get the urge for something sweet.

There are two great things about cookie dough: 1. You can make a lot and freeze what you don't use till you're ready for it another time. And, 2. Who doesn't love to eat cookie dough plain? Normally you might shy away from it because of the risk of salmonella. But using MuscleEgg Egg Whites in your recipes makes the cookie dough safer to eat since our egg whites are pasteurized to kill the bad stuff. So, feel free to make a couple batches so that you can snack while you bake AND have some more ready to go later!

Ingredients

  • 1/4 cup Chocolate Caramel MuscleEgg
  • 1 cup peanut butter
  • 1/4 cup brown sugar or coconut sugar
  • 1/4 cup 2 tablespoons milk of choice
  • 100 drops stevia extract or additional sweetener of choice
  • 2 tsp of course salt

Instructions

  1. Preheat oven to 375 degrees and line a baking sheet with parchment paper.
  2. Combine all cookie ingredients into a large bowl and mix until thoroughly combined.
  3. Divide and scoop cookie dough onto parchment paper.
  4. Press cookies down slightly (these will not rise much).
  5. Bake for 10-12 minutes until cookies are just set (cook longer for a crunchier cookie).
  6. Remove from oven and let cool.
  7. Prepare chocolate coating by adding chocolate chips and coconut oil in a small bowl, then heat for 30 seconds in the microwave. Stir and repeat in 15 second increments until completely melted.
  8. Dip each cookie in chocolate and sprinkle with pink sea salt.
  9. Enjoy!
