Chocolate Oatmeal Cookies
Who doesn't love a warm, soft chocolate oatmeal cookie? These ones are full of chocolatey goodness AND protein. They're not your average oatmeal cookie. Make a batch and you've got the perfect snack to keep you full and satisfied throughout the day. They're also a great post workout treat. Or, grab one before you hit the sack at night. OK, who are we kidding? You'll want to eat them every time you feel a sweet craving coming on.
And, what makes a good cookie even better? There's not many ingredients and they bake up pretty quick! - 1/4 cup Chocolate MuscleEgg
- 3/4 cups oats
- 1/4 cup Kodiak 'Dark Chocolate' Powercakes mix
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup softened butter
- 1/2 cup brown sugar
- 2 tablespoons baking stevia
- 1 Large whole egg
- 1 teaspoon vanilla extract
- 1/4 cup chocolate chips
Preheat oven to 350 degrees and line a baking sheet with parchment paper or a silpat.
In the bowl of a stand mixer cream butter, brown sugar, and stevia until light and fluffy. Add vanilla. Beat in egg and then egg whites. In a separate bowl, combine oats, kodiak, salt, and baking powder.
With stand mixer on low speed, slowly add dry ingredients. Mix until combined. Stir in chocolate chips.
Bake for 12-15 minutes until center of each cookie is set, but still soft.
