Breakfast Sausage Bites

These awesome breakfast sausage bites are like a whole breakfast in every bite! Made with egg whites, spinach, dried tomatoes, and of course sausage, they're everything you want in quick morning bite or when you want a little savory snack.

This recipe will make enough to feed the family for breakfast or yourself for at least a few days. THey're conveniently sized to take with you on the go. They taste great so that you can have something you want to eat available when you want it. And, they're easy to make! Double or triple the recipe to save time in the mornings!

Our recipe for breakfast sausage bites uses sun-dried tomatoes and spinach, but if you want to use a different combo of veggies, it's easy to swap! Try mushrooms and green peppers or olives and garlic! The options are endless.

Ingredients

  • 1 lb ground turkey or pork
  • 3/4 cup Plain/Organic MuscleEgg egg whites
  • 3 tablespoons melted butter
  • 2 tbsp milk of choice
  • 1/3 cup coconut flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon onion flakes
  • 1 tablespoon breakfast seasoning blend (1/2 tsp each sage, thyme, parsley, nutmeg)
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup sun-dried tomatoes
  • 1/4 cup nutritional yeast or 1/2 cup of shredded cheese
  • 1 handful chopped spinach

Instructions

  1. Preheat oven to 375 degrees and line a baking sheet with parchment paper. Brown sausage in a large pan under medium heat. Let cool.
  2. Add all dry ingredients and seasonings to a small bowl, mix well, set aside.
  3. Add egg whites to the bowl or stand mixer fitted with the paddle attachment. Beat on high for 1 minutes until light and fluffy. Drizzle in melted butter and milk. Turn mixer to low and slowly add dry ingredients to wet ingredients.
  4. Stir in cooled ground meat, sun dried tomatoes, spinach. Mix well until evenly distributed.
  5. Using a small cookie scoop, divide and portion cookies onto prepared baking sheet. Add cheese on top if desired. Cook for 15-18 minutes until golden brown.
